Commercial Canning of Acid and Acidified Foods

Penn State Extension is presenting a one-day workshop tailored specifically for smaller-scale commercial processors of shelf-stable acid and acidified foods packaged in glass jars or bottles. Topics covered include state and federal canning regulations, acidification and thermal processing methods, and container requirements. Practical information on commercial production of sauces, dressings, and jams & jellies will also be presented. Established smaller scale commercial canners, growers looking to add value to their annual harvest, and educators that foster entrepreneurship are all welcome. The one-day event will be held on April 29th at Yoder’s Country Market Restaurant and Buffet in New Holland, PA. The $50 fee includes a buffet lunch.
