This workshop is designed for very small manufacturers of human food; businesses eligible for size-based qualified exemption from the Preventive Controls for Human Food Rule. It is designed to help participants understand the basics of hygienic principles, food safety, regulatory compliance, and documentation systems. This includes documentation of size-based exemptions as a “qualified facility” and employee training programs. This workshop is intended for small (< $1 million in sales/year) producers for whom the 2.5-day PCQI training may not be appropriate.
To accommodate disruptions to Extension training due to the pandemic, three formats for workshop content are provided below:
- Six PowerPoint modules and a PDF of the participant binder (3-hr in-person workshop)
- Audio-over-PowerPoint (3x15 min) “fast lesson” recordings for asynchronous learning (3 in English, 3 in Spanish)
